Pumpkin & Spinach Salad Recipe
Ingredients
1/2 butternut pumpkin
200g baby spinach leaves
1 lge Spanish onion
60g slivered almonds
Dressing
¼ cup olive oil
1 tbl spoon curry powder
3 tbl spoons brown sugar
½ cup white vinegar
2 tbl spoons soy sauce
Method
To make dressing:
1 Combine oil, curry powder, sugar, vinegar and soy sauce in a cup and stir well
To make salad:
1 Peel pumpkin and cut into bite size pieces. Place onto a baking tray and spray with olive oil, bake for approx 30 mins or until brown
2 Cut onion into small BBQ shape slices (as you would if you were throwing the onion onto a BBQ)
3 Arrange spinach, pumpkin, onion and almonds in a large bowl (add as much onion as you think is necessary)
4 Pour dressing over salad and mix through
* For a bit of difference, add feta cheese
