This is a great Chilli Jam recipe - make up a batch, bottle it. Enjoy.
Suitable for use with chicken, pork and fish.
6 large fresh red chillies
1/4 cup white vinegar
1/2 cup castor sugar
1 teaspoon salt
4 cloves garlic
2 teaspoons fish sauce
Trim stems off chillies, (remove seeds for a milder flavour) and soak for 15 minutes in hot water
Place in blender with all other ingredients except fish sauce and process until smooth.
Transfer to a small saucepan and cook over medium heat for 15 minutes stirring frequently until thickened.
Allow to cool and stir in the fish sauce.
For a sweeter chilli add extra sugar up to 1 cup as desired
